Does something such as a perfect night even exist? Yes, we believe it does – at the St. Hubertus in San Cassiano, graced by the cuisine of chef extraordinaire Norbert Niederkofler. The world is lucky enough to count on many a good chef, but his “cook the mountain” concept is so unique it deserves to be mentioned. And yet many never truly believed in his project when, years ago, the chef banned anything which didn’t come from the Alps and their surroundings. Including lemon and olive oil. And yet in 2018, the St. Hubertus was crowned with its third star – the first of its kind in the world which didn’t feature caviar nor seafood in its menu. Today, Norbert Niederkofler has become a role model for many young, enlightened chefs around the world. Dining at the St Hubertus is always a pleasure – the long journey across valleys and mountains is soon forgotten when the starters are served. And the return journey can wait a day, as the nearby Rosa Alpina’s rooms are the cherry on the cake for this beautiful evening.
